Recipe: Berry-Berry Tea

We don’t know what it is about this time of year, but sometimes our love for a piping mug o’ hot tea edges a bit further in favor than that of a hot cup of coffee. It’s not sacrilege if it’s caffeinated tea, right?

Brew up a pot o’ tea. In the serving mug, combine both syrups and mix well together. Top with hot tea and enjoy.

Testing Freezer-Stored Coffee Beans

One of the most frequent questions that we’re asked is regarding how to best store coffee beans in order to keep them fresh. We have done several videos testing how beans hold up over time in their roast bags or a container such as the Airscape, but how about the oft-recommended freezer storage? How do beans perform after being frozen?

We put a couple of bags in the freezer back in October 2010 and then pulled them out of the vault three months later. Watch as Gail pulls shots using one bag that was completely sealed and another bag that was opened and then folded closed using the bag’s tabs.

Metric Plumbing Adapter

To plumb in your Rocket Professional or Evoluzione espresso machines, you receive the connecting hose with the machine but not much else. One of the biggest stumbling blocks we’ve seen is that the end of that hose is a British Standard Thread — a fitting into which US plumbing components will not fit. So you have to, first and foremost, convert the hose’s end to a US standard in order to hook it into the rest of your plumbing apparati.

We found this adapter, which takes the hose’s fitting and converts it into a US standard. By attaching this to the end of the included hose, you can then easily attach the other necessary components for plumbing your machine into your location’s main water line.

Recipe: Espresso Steak Rub

Espresso as an essential ingredient with meat is not anything new around these parts! This particular Espresso Steak Rub will give your next meal the kick it needs and an earthy natural flavor that will pop. Who says January is too early to fire up that grill?!

Ingredients:

  • 1/2 cup ancho or chile powder
  • 1/4 cup ground coffee — espresso fine
  • 4 tablespoons hot or sweet smoked Spanish paprika
  • 3 tablespoons brown sugar
  • 1 tablespoon dry yellow mustard powder
  • 1 tablespoon salt
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon powdered ginger
  • 2 tablespoons chipotle chile powder.
  • 2 New York Strip Steaks, each about 8 oz. and 1-inch thick

Directions:

  1. Mix all the ingredients together and season two refrigerated New York Strip Steaks in the mixture.
  2. Set the steaks aside and let them come up to room temperature before grilling on medium to high heat.
  3. Grill steaks until cooked to your preference, about 4 to 5 minutes for medium-rare.
  4. Remove from heat and let rest for 3 to 5 minutes before serving.
  5. For a little flare, mix a few tablespoons of rub into a 1/2 stick of butter and place it on top of the steak when serving.
  6. Extra steak rub should be stored in an airtight container. Makes about 1 and 1/2 cups.
